Samgyetang (Ginseng Chicken Soup)
Ingredients:
1 Cornish hen (1 pound)
1/2 cup of sweet rice (soaked 3 hours)
7 cloves of garlic
6 Jujubes (dried red dates)
2 fresh Ginseng
3 green onions
2 thin sliced ginger
1 onion
10 cups of water
1 chopped onion
salt
Directions:
1. Rinse sweet rice and soak for 3 hours.
2. Use salt to rub the Cornish hen and wash it under cold running water.
3. Cut off garlic head and ginseng head. Cut onion in half and chop 1 green onion.
4. Stuff Cornish hen with sweet rice, 1 clove of garlic and 1 Jujube (dried red dates)
5. Make a cut on the bottom part of one thigh and insert the other thigh through to keep the legs cross together.
6. Place Cornish hen into a pot. Pour in 10 cups of water, cover and cook over high heat.
7. Remove foam while boiling.
8. Turn down the heat to medium low and simmer for 1 hour.
9. Turn off the heat. Transfer the cooked Cornish hen, Jujube, Ginseng, and broth to a Korean ceramic pot. Bring them back to boil.
10. Add chopped green onion, and salt to taste. Enjoy!!
