These chicken schnitzels in beer batter and walnuts, shallow fried to a beautiful golden color are a real treat for your Sunday lunch, party or just for a midweek dinner. You can make them in no time, they taste delicious and they go well with any vegetable salads, mashed or crushed potatoes, in your sandwich, or just a snack with some nice dip.
You can use any beer you like, but the best would be some nice lager. And do not worry about alcohol, it will evaporate. At least most of it. You will not taste the beer at all. But, feel free to use sparkling water instead of beer and one more egg yolk. It will be just fine.
This batter is certainly not tempura batter, but it is worth a try. I promise, it's delicious.
The key points are:
• To get the consistency of the batter right. The consistency should be like the batter for pancakes, crepes or a thicker cream.
• Use beer as cold as possible.
• The oil must be really hot when you put your coated chicken in. Make a test like I did in the video. If the oil is not hot enough, the schnitzels will soak up too much of oil and will be soggy.
• When the schnitzels are in the oil, immediately reduce the heat to medium - medium high and fry slowly for the best result.
• If you are not allergic to nuts, don't omit the walnuts. They will elevate the taste even more.
Ingredients
600 g chicken breasts
3 eggs 130 - 150 g plain / all purpose flour
40 - 60 ml good quality cold beer
salt and pepper to taste
a handful of chopped walnuts
olive oil with a high smoking point
Butterfly the chicken breasts and cut them to the pieces of your choice. The thickness should be approx. 0.5 - 0.8 cm.
And don't worry about their shape.
Season on both sides with salt and pepper.
Cover the pieces with parchment paper and VERY GENTLY pound them using a mallet (or rolling pin) to make sure their thickness is even.
Make the beer batter:
Beat three eggs.
Salt to taste.
Break the eggs with a whisk or fork and beat them lightly. 130 - 150 g of plain / all-purpose flour. (Use about 130 g first and add more if necessary)
Mix the flour and eggs a little bit before you add liquid.
Add a little bit of COLD beer (about half of the amount at this point).
Mix it to a thick, smooth, lump free consistency.
Now add the rest of the beer and whisk again.
The consistency should be like a batter for pancakes or a thicker cream.
Coat chicken with plain / all purpose flour.
Pan on. Oil with a high smoking point. Must be hot.
Now we will shallow fry our little schnitzels.
Important! Reduce the temperature to medium - medium high.
Dip each piece in the batter and carefully place to the hot oil.
Sprinkle with chopped walnuts. Only one side.
Fry slowly on both sides until golden.
Take them out and place them on a sheet of kitchen paper.
We like it with any salads.
