This video will introduce the freshest way to eat your fish, also known as “ikejime.” It involves the insertion of a spike quickly and directly into the hindbrain, causing immediate brain death Destroying the brain and the spinal cord of the fish will prevent reflex action from happening. This will help you making your fish fresher and more delicious. It could look cruel, but this method is considered to be the fastest and most humane method of killing fish (Fish welfare and quality as affected by pre-slaughter and slaughter management.
