Today I am sharing another recipe using Strawberries for National Strawberry Month, I am making a simple and easy Old Fashioned Strawberry Crisp!

Fresh, juicy, flavorful Strawberries baked in a crunchy Oatmeal Crumble; perfect treat for Memorial Day and the Summer Months for BBQs and Picnics!

2 pints (32 ounces) fresh strawberries, rinsed, hulled and quartered
1/4 cup white sugar
2 tablespoons cornstarch
2 teaspoons freshly squeezed lemon juice
2 teaspoons pure strawberry extract
1 cup all-purpose flour
1/2 cup old fashioned rolled oatmeal
1/3 cup white sugar
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
Vanilla ice cream, for serving


Preheat Oven to 350 degrees

Spray a 9-inch pie plate with cooking spray or grease with butter and set aside.


In a large bowl, add in the strawberries, 1/4 cup sugar, cornstarch, lemon juice and strawberry extract; stir until well combined (it will create a glaze) set aside. Place the berries into the prepared pie dish and set aside. In a separate bowl, add in the flour, oatmeal, 1/3 cup white sugar, brown sugar, cinnamon and salt; stir or whisk until well incorporated. Add in the cold butter cubes and using clean hands, cut the butter in until the mixture is crumbly. Sprinkle the oatmeal topping evenly over the strawberries. Bake for 35 to 45 minutes until the topping has browned and crisp and the strawberries are bubbly. Remove from the oven and let it cool for 10 to 15 minutes. Serve warm with vanilla ice cream and enjoy!
