The ingredients:
300 g duck leg
250 ml goose fat
100 g red cabbage
100 g pear
1 lemon
demi glace
500 g beef marrow bones
200 g celery
200 g parsley root
200 ml red wine
150 g tomato paste
200 g onion
100 g butter
30 g truffle paste
50 g dried cranberries
1 tablespoon of honey
a pinch of salt, pepper and marjoram
