Swedish pancakes are easy to make, they are thin and light and we like to dress them up with lemon juice, powered sugar and fresh berries. This recipe can easily be doubled, tripled or quadrupled.

Lemon juicer: [ Ссылка ]
Ingredients:
1 egg
1/4 cup milk
1 tsp vanilla
2 Tbsp flour
1 tsp melted butter
For garnish: lemon juice powdered sugar and fresh berries
Combine all ingredients except for garnish in a bowl and whisk to combine. There will be a few lumps and that is fine.
Heat an 8 inch skillet with 1/2 tsp of butter.
Lift pan off burner and pour in half the batter and swirl to cover bottom of the pan.
Cook until edges are set and it is lightly golden brown on the bottom. Use a spatula to losen the edges and gently lift and flip. Cook on other side for about 30 seconds or until golden brown.
Fold pancake into thirds or enjoy open face. Squeeze lemon juice over pancake, add fresh berries and sprinkle with powered sugar.
