A mildly flavored oil, peanut oils is excellent for frying and is frequently used in Asian cuisines. Most major grocery stores carry peanut oils in several varieties. While the wok can be used for a variety of cooking methods it is primarily used for stir-frying. You can’t stir fry properly unless you crank up the heat. Cooking at high temperatures requires oil with a high smoking point. In other words, you should always stir fry in oil that has a high smoke point.
