This Asian Beef Porridge - Congee or Jook, whatever you want to call it is the perfect fall, cozy, comfort soup recipe.
• 1 lb beef
• 2 cups spinach, chopped
• 1.5 cups jasmine rice
• 3 tbl ginger, minced
• 9 cups of water
SEASON TO TASTE, AFTER
Beef marinade
½ tsp salt
½ ts sesame oil
½ ts white pepper
In a mixing bowl, add the beef and marinade ingredients and mix together. Let marinade for about 20 mins.
Add 1.5 cups of rice (washed), the marinated beef, ginger, and 9 cups of water in the instant pot. Close the lid and pressure cook on high for 25 minutes, then natural release at 15 mins. Be careful when opening the lid.
If you want to thicken your congee, you can turn the saute function on and let it simmer for a bit longer. Here you will season to taste. I added about 3 table spoons of fish sauce, and ½ tablespoon of light soy sauce then garnished with fried scallions and green onions and chili oil. But it’s really up to you on how you want to season and garnish. Which is why I love congee/porridge because its to your preference. Enjoy! Follow for more!
