Here is a quick & easy recipe for a high protein salad made of chickpeas along with some veggies. There is a nice olive oil dressing to balance it out. Chickpeas are very nutritious and a great source plant based protein for vegetarians and vegans. The salad keeps you full for longer and is a good weight loss option too. It controls glucose levels & is good for digestion.
👉Recipe:
Take chickpeas - 500 gram
Wash them throughly
Soak them overnight
Next morning add salt- 1 teaspoon
Pressure cook the chickpeas
Strain the water
Chop & add tomatoes- 3
Chop & add spring onions- 2
Chop & add capsicum- half
Chop & add radish- 5
👉For the dressing:
Take olive oil- 1 tablespoon
Add lemon- half
Add sea salt- to taste
Add roasted & ground cumin- 1 teaspoon
Mix well
And add the dressing to the chickpea salad
