Christmas Meringue Cookies
These meringue cookies are light, airy, crunchy, and oh-so festive! Did I mention they are incredibly easy to make and only require a few ingredients? They would also make the perfect addition to your Christmas cookie tray. #christmaskisses #meringuecookies
INGREDIENTS
• 2 Egg Whites (Large Eggs)
• 1/2 cup granulated or fine sugar
• 1/8 teaspoon salt
• 1/4 teaspoon cream of tartar (or lemon juice)
• 1/2 teaspoon vanilla extract
• 1/2 teaspoon almond extract or peppermint extract (optional)
• Green gel food coloring
• Sprinkles
RECIPE
Directions
1. Preheat oven to 200F. Measure a parchment sheet to fit the length of a cookie sheet.
2. Sprinkle cream of tartar into egg whites and, using either a hand or stand mixer, mix on high speed for about 5 minutes until egg whites are frothy.
3. Add salt to sugar and combine.
4. Slowly add 1 tablespoon of sugar-salt mixture at a time until sugar crystals are completely dissolved into the egg whites. Using the highest mixing setting on a stand mixer, this will take about 15 minutes. Using a hand mixer, this will take about 20-25 minutes. Check to make sure sugar is completely dissolved by pinching meringue in between fingers to feel for any remaining sugar.
5. Optional Step: If you find that the sugar is not dissolving into egg whites even after a few minutes of whisking, add 1 teaspoon of water at a time to the meringue and whisk for 2 minutes. Add no more than 4 teaspoons of water total.
6. Whisk in extracts and combine until evenly distributed.
7. Attach an extra large open star French piping tip to your piping bag.
8. Line the sides of the bag with green gel food color using a small paint brush or bamboo skewer.
9. Add meringue mixture to piping bag and create Christmas tree and wreath shapes. Top with sprinkles for decoration.
10. Bake cookies at 200F for 2 hours. Turn off oven but do not take the cookies out. Leave cookies in the oven for another 2-3 hours or until completely cooled. Do not open the oven door at any time as this lets the heat escape. I bake my cookies and then leave them in the oven overnight for the best results.
