Lad Na
Lad Na is a Thai/Laos dish that is so easy to make at home. The word 'lad' in Thai means to pour over and the word 'na' means face. Lad Na is served all over Thailand, some considered Lad Na as a national Thai dish. Lad Na is typically served not spicy, can you believe that? But you can make it more spicy just by adding some chili peppers or whatever you like. In Thailand, broccoli or Gai Lan which is chinese broccoli but you can also use asparagus.
Lad Na is a two step process. You fry your rice noodles first and then you make your gravy. You then pour (Lad) the gravy over the stir fried noodles. That's much better than over your face (na).
Lad Na is easy to make at home, you will need the following ingredients:
10 Ounces Wide Rice Noodles
4 Tablespoons Vegetable Oil
1 Tablespoon Black Soy Sauce
1/2 Pound Chicken, Cut into Thin Slices
3 Tablespoons Tapioca Flour
1 1/2 Cups Gai Lan or Broccoli
1 Tablespoon Coarsely Chopped Garlic
3 Cups Chicken Stock
1 Tablespoon Fish Sauce
1 Tablespoon Oyster Sauce
1 1/2 Tablespoons Sugar (or a bit less if you prefer)
1/2 Teaspoon red pepper flakes or chili peppers
Directions:
1. Pre-soak rice noodle in warm water for at least an hour, then drain.
2. Cut Gai Lan into bite-size pieces including the stems.
3. Thinly cut pork, beef or chicken into bite-sized pieces.
4. Lightly coat the chicken with tapioca starch (1 tablespoon) and chill in the fridge for 10 minutes. Save some tapioca starch to be added later when you make the gravy.
5. In a frying pan brown the noodles in oil. Pour the sweet soy sauce and fish sauce over the noodles and stir until all the noodles are coated. Remove and set aside on serving plates.
6. Wipe the pan clean and pour in about 2 tablespoonful of oil and lightly brown garlic (add chili peppers here).
7. Add chicken and cook for 5 more minutes.
8. Combine the 1 cup of broth and 1 tablespoons of tapioca starch and mix.
9. After about 3-4 more minutes, pour in about 2 cups chicken broth and flavor with fish sauce.
10. Bring sauce to a boil and slowly add cornstarch solution, stir until thicken.
Pour sauce over noodles, adding a teaspoon or more of sugar if so desired.
