Meals in winters are incomplete without Gajar aur Mirch ka Achar. To make this instant and simple गाजर मिर्च का अचार slightly toss carrot and chili with spices. Add some vinegar, it adds flavor and also increases the life of your pickle. It is very tasty and healthy. Try it ASAP

"0:06 add Ghee
0:15 Add roasted peanuts
0:18 add purple yam
0:30 add fresh coconut
0:37 add salt"

Ingredients
4 large carrots (gajar)
12-15 light green chillies (mirch)
¼ cup methi kuriya
1 tbsp split yellow mustard seeds
3 tbsps mustard oil
1½ tsps fennel powder
½ tsp asafoetida (hing)
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Black salt to taste
¼ cup vinegar
Method
1. Pee the carrots and cut them into 2 inch thick strips.
2. Slit the green chillies and deseed them.
3. Put the methi kuriya in a blender jar, add split yellow mustard seeds and blend to a fine powder.
4. Heat mustard oil in a non-stick pan, let the oil smoke up.
5. Add the blended powder, fennel powder and asafoetida and sauté for 20 seconds. Add the carrot and sauté for 2-3 minutes.
6. Add the green chillies, turmeric powder, red chilli powder and salt and mix well. Cook for 1-2 minutes.
7. Add black salt and mix well. Add vinegar, mix and cook for a few seconds. Take the pan off the heat and allow to cool completely.
8. Serve as required.
