Homemade Strawberry Jalapeño Jam
INGREDIENTS:
4 cups well-crushed strawberries (Making 4 cups after crushed)
1 cup minced jalapeno peppers
¼ cup lemon juice
1 1.75-ounce package powdered fruit pectin (I used Sure-Jell)
7 cups white sugar
Place the crushed strawberries, minced jalapeno pepper, lemon juice, and pectin into a large saucepan mix well, and bring to a full boil over high heat.
Once boiling, stir in the sugar until dissolved, return to a full boil that can't be stirred down, and cook for 1 minute.
Sterilize the jars and lids in boiling water for 10 minutes (double-check the directions for the lids you have, they may just say wash with warm soapy water and do not boil).
Ladle the hot jam into the hot sterilized jars, filling the jars to 1/4 inch of headspace.
If necessary remove any air bubbles by using a plastic knife around the inside of the jar. ( I didn't find it necessary to do so here).
Wipe the rims of the jars with a moist paper towel to clean the rims for the lids and rings. Top with lids, and screw on rings finger snug and place the jars onto the canner rack.
Bring to a boil over high heat, then carefully lower the jars on the rack into the pot. Pour in more boiling water if necessary until the water level is at least 1 to 2 inches above the tops of the jars.
Bring the water to a full boil, cover the pot, and process for 10 minutes, and then turn off the heat. Let sit for 5 minutes.
Remove the jars from the pot and place them onto a soft towel on the counter to cool for 12 to 18 hours. (I went about 12 hours or so here)
Once cool, press the top of each lid with a finger, ensuring that each jar is sealed (the lid does not move up or down at all). Lable and date and store in a cool, dark area.
Jars that did not seal can be placed in the fridge for use right away.
