When you have 3 eggs and milk, make this souffle pancake recipe | Fluffy and Delicious Japanese street food | Souffle pancake | Souffle pancake with maple syrup
Ingredients:
3 large eggs, separated
1/2 cup all-purpose flour
1/4 cup milk
4 Tbsp sugar
1/4 teaspoon vanilla extract optional
Maple Syrup, Powdered sugar and fruit, for serving
Instructions:
In a large mixing bowl, whisk together the egg yolks, flour & milk until smooth.
In a separate mixing bowl, beat the egg whites with added sugar until stiff peaks form.
Gently fold the egg whites into the batter until just combined.
Heat a non-stick skillet over medium heat. Using a 1/4 cup measuring cup, scoop the batter and pour it onto the skillet.
Cook until the edges look set and the top starts to bubble, about 2-3 minutes.
Carefully flip the pancake using a spatula and cook until the other side is golden brown, about 1-2 minutes.
Repeat with the remaining batter, making sure to whisk the batter before scooping to ensure the egg whites are evenly distributed.
Drizzle maple syrup and serve with a dusting of powdered sugar and fresh fruit on top. Enjoy
