Hey guys! I am Tom. Let's make sweet and sour pork ribs. It’s a famous dish in Shanghai cuisine. If you go to any Shanghai style restaurants, they will have it on their menus. Its super tasty and everyone loves it. However, restaurant version of sweet-sour pork ribs is kind of hard to achieve at home, so in this video, I am going to show you guys a homemade version. Its surprisingly easy, we don’t need any fancy cooking technique and it will be just as good as the restaurant’s version.
Ingredients:
Cleaned 2 pounds of pork ribs
2 tbsp cooking wine
2 tbsp soy sauce
5 tbsp Chinese black vinegar
4 tbsp sugar
1 1/2 tbsp ketchup
Directions:
Get 2 pounds of pork ribs. We are going to clean them first. Add 3 tsp of salt, 1 tsp of baking soda and 1/2 cup of cooking wine. Massage the ribs for 5 mins. Here is the tip… using baking soda will make meat more tender. Add some water and wash the ribs until they are clean. And then we are going to sock the ribs for about an hour. Make sure the ribs are dry before cooking.
Preheat the pan for 45 seconds with median heat. Add the ribs in. cook until we can see the crispy color on the outside. Remove them and set aside. Clean the pan and bring the ribs back. Keep adding 2 tbsp of cooking wine, 2 tbsp of soy sauce, 4 tbsp of Chinese black vinegar, 4 tbsp of sugar and 1 ½ tbsp of ketchup. Mix well. Add hot water and submerge the meat. once water starts to boil. We are going cover the pan and cook the ribs with low heat for about an hour. Remove the cover and turn heat to median to reduce the liquid for 5 mins. Just a heads up… don’t use high heat to reduce the liquid. Otherwise, ribs will be burned and has bitter taste. Turn heat to low, 1 tbsp of vinegar and cook the ribs for another 5 mins. Place them to a plate and enjoy!
