Here are three vegan salads that even can be served as a side dish or even as a complete meal.
1 - Mediterranean potato salad
1 kg potatoes (2.2 lb) boiled and diced
1 red onion (sliced)
1 cup flat leave parsley
few leafs of fresh mint
handful kalamata olives
1 tsp dried mint
1 tsp chili flakes
black pepper
salt
lemon juice (to taste)
olive oil
Mix all together and let is rest at least for 15 minutes.
2 – Lentil salad
200g cooked lentils (0.5 lb)
1/4cup spring onions
1/4 cup dried tomatoes
1/4 cup fresh dill
1/4 cup walnuts
black pepper
salt
white wine vinegar (to taste)
olive oil
Mix all together and let is rest at least for 15 minutes.
2 – Red cabbage salad
300 g red cabbage (0.7 lb)
Salt
1 carrot (grated) few radishes' parsley seeds of 1/4 pomegranate
pomegranate molasses (to taste)
olive oil
First rub the salt in the cabbage to make is softer and better digestible.
Then add all the other ingredients and mix all together and let is rest at least for 15 minutes.
