If you have ever tried my recipes, you will know I don't like very sweet desserts. And another thing about me is that I love Japanese cakes, such as matcha cake, but one of my favorites is the Japanese Strawberry Shortcake. If you get fresh strawberries, then you must try this absolutely amazing strawberry cake!
Ingredients:
Shortcake:
flour 120g.
sugar 100g.
baking powder 1 teaspoon
melted butter 45g.
milk 100ml.
2 egg yolks
4 egg whites
vanilla extract 1 teaspoon)
lemon zest 1 teaspoon
lemon juice 1/2 teaspoon
Cream:
fresh heavy cream 500ml.
mascarpone cheese 250g.
icing sugar 2 tablespoons
fresh strawberries 400g.
Instructions:
1. In a bowl whisk the eggs with the lemon juice. Once they get a bit foamy, start adding the sugar gradually. Once you get firm peaks, they're ready.
2. In a different bowl, add the egg yolk and mix it with milk and butter. Then add the lemon zest and vanilla extract.
3. Add the baking powder and mix with the flour and add half of the flour quantity into the egg yolks mixture and whisk.
4. Add the rest of the flour and mix until you get a nice and thick mixture (watch the video instructions).
5. Add two tablespoons of the egg whites into the egg yolks mixture and combine.
6. Once the egg yolks mixture becomes more creamy, add it to the egg whites and combine gently, as in the video.
7. Pour the mixture into two trays (20cm squared trays) and bake in the preheated oven at 160°C for about 15-20 minutes. Use a toothpick to see if the cake is ready. Take them out and let to cool down completely.
8. Meanwhile, whisk the mascarpone cheese with heavy cream and icing sugar until you get a nice and smooth cream.
9. Cut the strawberries into small slices or even in halves.
10. Place one shortcake, then spread the cream, add the strawberry slices, then cover with cream. Repeat the process with the second shortcake, then add the cream left and decorate it with strawberries.
Cut the cake edges and leave the cake to best about 6-8 hour or overnight, in the fridge.
You can then cut your Japanese strawberry shortcake as you wish!
