Ingredients:

1 lb. orecchiette
1 lb. mild Italian sausage
3 gloves garlic minced
2 tablespoons olive oil
1 -2 cups chicken broth
4 large tomatoes cored and chopped
1 tea. salt
¼ tea. pepper
¼ tea. red pepper flakes
11 oz. tub fresh baby spinach
¼ cup minced fresh flat leaf parsley
¼ cup grated parmesan cheese

Recipe:

Remove the casings from the sausage links.

In a large skillet, spread and heat 1 tablespoon olive oil over medium high heat.

Add in the sausage links and crumble the sausage as it cooks. Use a flat top wooden spoon or spatula to break it apart. Cook until lightly browned,
6-7 minutes.

Once cooked, remove with a slotted spoon and set aside.

Remove excess oil from the pan, only keeping a tablespoon.

Reduce the heat to medium and add the garlic; cook for 1-2 minutes until garlic becomes fragrant and lightly brown.

Add chicken broth and scrap the bottom of the pan and stir.

Add in the chopped tomatoes, salt, pepper and red pepper flakes. Stir to combine. Reduce heat to low and cover and let simmer.

Bring a large pot of water to a boil. Add in 2 tablespoons of coarse salt when water boils.

Add the orecchiette, quickly stir. Cook according to package instructions or until al dente. Do not overcook.

Uncover the tomato broth and stir.

Drop in the baby spinach. Stir. Let it begin to wilt….

When pasta is cooked, use a slotted spoon or small colander and add pasta to the tomato broth. Add sausage. Add parsley. Stir.

Add parmesan cheese and one ladle of pasta water and stir quickly.

Serve with parmesan cheese on the side and crusty bread to sop up the flavorful broth.
