Kkakdugi is a type of kimchi made with Korean radish called Mu in Korean. It's simply cut the radishes into cubes, salt for a short time, and then mix with the kimchi seasonings called Kimchi Yangnyeom.
All the ingredients are almost the same except main ingredient. Instead of using napa cabbage, use Korean radishes.
It's super simple and easy to make!
This time, I would like to show you even easy way to make.
Ingredients
* 3 Korean Radishes (around 5 lb)
* 1/3 cup of Kosher salt for salting process
* 2 tbsp of coconut sugar for salting process
* 1 bowl of instant cooked rice (We are going to use only half of the bowl, around 3.5 oz)
* 1 cup of purified water
* 4 tbsp of Korean Anchovy Fish sauce
* 1 tsp of Kosher salt
* 1 tbsp of coconut sugar
* 2 tbsp of ground or minced garlic
* 1/2 cup of Korean red pepper flakes
