Carrot cake is one of my favorites and this recipe is a very easy one. This cake is so delicious, and if you're like me and love carrot cake, you have to try this. It's vegan, gluten free and refined sugar free.

Recipe:
2 cups GF oat flour
1 cup GF rolled oats
A pinch of salt
1 tsp cinnamon
1 tsp cardamom
1 tsp bicarbonate of soda
1 tsp baking powder
1 tbsp chia seeds
6-7 small dates (soaked in hot water for about 10 minutes)
The zest of a lemon (organic, washed)
Juice from 1/2 lemon
1 1/3 cup GF oat milk (or other plant milk you prefer)
6 mini-carrots or 2 bigger ones
2 tbsp olive oil
Frosting
1 1/3 cup soaked cashews (or boil them in 5-10 minutes, rinse)
1 - 1 1/3 cup water (add a little water at time so it doesn't become too runny)
3 tbsp date powder, maple syrup, agave or other sweetener of choice
A pinch of salt
1-2 tbsp lemon juice
Optional: some vanilla extract or bourbon vanilla powder
Put the frosting in the fridge for a while befor adding it on the top of the cake.
Bake in the oven for 30-35 min, 180 C degrees (356 F).
Let the cake cool down before adding the frosting.
