Pesto di Pistacchi or Pesto di Bronte is simple and satiating, quite similar to the more well-known Pesto alla Genovese but with one key difference: the pistachios are the most prominent ingredient. A refreshing, quick, rich summer sauce for gnocchi, as we did in today’s video, pasta, or even spread on crostini!

PESTO DI PISTACCHI
1 1/2 cups shelled pistachios
1/2 cup extra virgin olive oil (quanto basta)
2 cloves garlic
5 fresh basil leaves
3 sprigs of fresh mint or marjoram
1/2-1 cup Caciocavallo Ragusano cheese
Salt to taste
3/4 cup pasta coking water (or until desired consistency is reached)
