Fermented Banana Avocado Ice Cream:
Smooth & Creamy, Guilt Free Probiotic Ice Cream, that is loaded with nutrients and good fat from coconut milk and avocado. We will use fermented banana to add probiotic to the ice cream. The creamy texture comes from avocado and coconut milk (fat only). Before starting to make this, place coconut milk in the fridge overnight to separate the liquid and fat. The coconut liquid and liquid from the fermented banana will be used for smoothies later, zero waste.

Ingredients
• 2 Fermented Bananas (strain well don’t need liquid)
• 2 small avocados
• 1 can coconut milk fat only (chill in the fridge overnight)
• ¼ tsp organic stevia extract powder (any sweetener will do, use what you have)
• A pinch of sea salt
• 1 tbsp lemon juice (to protect avocado from turning brown)
Directions
1. Add all the ingredients to a blender and blend until smooth. (I forgot to add lemon juice in the video, so I added it after and stirred by hand).
2. Transfer the mixture to a freezer-safe container
3. Place in the freezer stirring every hour for 3-4 times until it’s frozen.
4. This is a delicious, not to sweet ice-cream. Its texture is smooth and creamy*. Enjoy this guilty free version of a dessert that’s really good for your body, enjoy!!!
** If you freeze your ice cream overnight it will become very hard to scoop. Allow to thaw in the refrigerator until it becomes soft enough to beat, may be 1 hour, depending on how frozen it is. Don’t put in microwave to thaw because you will kill your probiotic.
