Today we're making Grilled Italian Sausage Sandwiches with Peppers and Onions cooked over an open fire. You can also do this with any charcoal grill, just setup for a two-zone fire, with a target temp of 325 (medium heat) for the direct side. Cook the sausages over direct until internal temp hits 160 degrees. Set any finished sausages on the indirect side to hold until other sausages are finished cooking.
