In this video, I go over a real simple Vegan Pasta Recipe that is perfect for a quick lunch and stays good in the refrigerator. If you guys are not on a vegan diet, this pasta salad is still super delicious and comforting for all.

Ingredients:
3 cups of shredded kale
1 lime
2 tbsp of fresh minced garlic
1 can of sliced black olives
A pinch of salt to taste
1 lb bag of penne pasta
1 tbsp of organic olive oil
1 1/2 cups of diced tomatoes
1 can of organic Chickpeas
