For the Shrimp:
1 pound raw shrimp
1 packet Ortega fish seasoning
2 tablespoons oil
For the Guacamole:
3 avocados, halved, seeded and peeled
¼ cup diced tomato, optional
1 packet Ortega Guacamole seasoning mix
For the Spanish Rice:
1 cup long grain rice
2 tablespoons oil
¼ onion, minced
1 tsp. minced garlic
½ cup tomato sauce
1 tablespoon taco seasoning
½ teaspoon salt
2 cups water
To assemble:
Ortega large flour tortillas
Ortega Taco Sauces
Sour cream
Lettuce
Cilantro
Shredded cheese
To Cook Shrimp: Heat a large skillet over medium-high heat. Combine shrimp, fish seasoning, and oil in a medium bowl and add to the hot skillet. Cook for 2-3 minutes or until shrimp is cooked through.
To Cook Spanish Rice: Rinse rice and set aside. Heat oil in a medium pot on medium heat. Add the onion and cook for 2-3 minutes or until golden. Add the garlic, tomato sauce, taco seasoning, salt and water. Stir and cover pan. Let simmer for 25-30 minutes or until all is cooked and there is no liquid left. Fluff before serving.
To Make Guacamole: Mash avocados in a medium bowl. Add tomato and guacamole mix packet. Stir until mixed through and creamy.
To Assemble:
Place a tortilla on a work surface. Add 1/4 - 1/3 cup of rice just below the center. Top with ¼ cup shrimp, a large scoop of guacamole, sour-cream, some lettuce, and cilantro. Additionally, you can also add cheese or beans if desired. Fold up the bottom to cover the filling then fold the edges in Roll up tightly, then wrap in foil (see video). Serve as is or heat in the oven for 15 minutes.
