The Tokyo ramen scene is fiercely competitive! I visit ramen shop “Marue” on its opening day and speak directly to the owner about how the day went. Was he successful with his modern, perhaps groundbreaking ramen? Did customers like it or not? We talk about his entire ramen journey and of course dive into the ramen - which features massive pieces of chashu pork!
I also revisit one of Tokyo’s most famous tonkotsu (pork bone ramen shops) in the Ikebukuro neighborhood.
