It’s the one I use for Gyros, but it’s so good I use it when I’m not making gyros too!
Greek Chicken:
1.25 kg / 2.5 lb drumsticks and chicken thighs , bone in skin on
Marinade:
6 garlic cloves , minced (~ 2 tbsp)
2 tbsp white wine vinegar (or red wine or apple cider vinegar) 1/2 cup / 125 ml lemon juice
2 tbsp extra virgin olive oil
3/4 cup Greek yogurt (I use Farmers Union Greek Yogurt)
1 1/2 tbsp dried oregano
1 tsp salt
1/2 tsp black pepper

1. Mix Marinade, add chicken. Marinate overnight (minimum 3 hours).
2. Bake 30 minutes at 180C/350F, baste then bake a further 20 minutes. Use foil lined tray with optional rack, and give it a spray of olive oil if you want extra shine / even golden.
3. I like to serve with plain Greek yogurt or tzatziki with Greek Salad and flatbreads or lemon potato salad OR the most amazing Greek LEMON ROAST POTATOES! (see recipes on my site). Also see recipe on my site for other chicken cuts, including breast.
