Vandaag gaan we een mooi stuk entrecote grillen op de bastard kamado. Eerst moet de entrecote een beetje opgeknapt worden en daarna in stukken verdeeld. Het vlees wordt gekruid met een rub waarin koffie zit verwerkt. Dat geeft een heel fijne smaak aan met name rundvlees. De bereiding van dit stuk entrecote gaat op de ‘low and slow’ manier. Dat wil zeggen dat het langzaam gegaard wordt. Voordeel van langzaam garen, ook wel ‘reverse sear’ genoemd, is dat de garing van het vlees door en door is. Dit betekent dat het hele stuk vlees dezelfde garing krijgt. In tegenstelling tot het grillen direct boven de kolen. Daar zie je dat de buitenkant goed doorbakken kan zijn terwijl de binnenzijde nog rauw kan zijn. De mate van gaarheid wordt ook wel cuisson genoemd.
Om extra smaak toe te voegen wordt hier het vlees ook een poosje gerookt met hickory hout. Hickory is een voornamelijk Amerikaanse houtsoort en hoort tot de okkernoot familie. Het geeft een krachtige typische smaak en past heel goed bij rundvlees.
Als het vlees een kerntemperatuur van 54 graden Celsius heeft gekregen haal ik het van de barbecue en snijd ik het in plakjes. Soms heeft het vlees nog niet een mooi gekleurd korstje gekregen en in dat geval kan het stuk nog even kort boven een direct houtskoolvuur worden afgegrild. In dit geval was het al mooi gekleurd en kon het onmiddellijk versneden worden.

When the meat has reached a core temperature of 54 degrees Celsius I remove it from the barbecue and cut it into slices. Sometimes the meat has not yet gotten a nice colored crust and in that case the piece can be grilled briefly over a direct charcoal fire. In this case, it was already nicely colored and could be sliced immediately.
