Ingredients:
* Sugar - 1/2 cup
* Water - 1/2 cup
* Ghee (clarified butter) - 1/4 cup
* Maida - 3 cup (add gradually)
* Salt - 1/2 tsp
* Elaichi powder - 1/2 tsp
* Oil or ghee for deep frying
Instruction:
* In a sauce pan add sugar, water & ghee, stir well & heat on high flame until sugar dissolves & starts boiling. Turn off the gas.
* Transfer the sugar mixture into a large mixing bowl, cool slightly.
* Add salt & elaichi powder in a warm liquid mixture, mix.
* Now add 3 cup of maida (1 cup at a time as shown in the video).
* Knead the mixture into a soft dough. Add extra maida or water If required. (The dough must not be sticky).
* Cover the dough with damp cloth & rest for 30 minutes.
* After 30 minutes knead the dough well for about 1-2 minutes.
* Now take a big ball of dough (remaining dough should be covered with damp cloth).
* Roll the dough slightly thick.
* Cut in diamond shapes.
* Deep fry in hot oil, stir occaionally (medium-low flame) until crisp & golden.
* Drain the fried shankarpali/shakapara on a paper towel to remove excess oil.
* Allow the Shankarapli to cool down completely and store in air tight container (this ensures they remain crispy for long time).
