History of the Italian Gravy
Is it the Italian gravy or the Italian sauce? The never ending debate among Italians-Americans -
I can not tell you how often I have heard the comment, ‘gravy is the brown stuff we put on meat. The traditional Italian-American dish with red gravy (or sauce) is based on Neapolitan ragu made with meat, tomato, and onion that’s commonly served with pasta. If you visit Naples, Italy that is - you won’t find the word “gravy” on any menus.
Historians speculate that families who immigrated earlier used “gravy” to reflect the names of dishes they saw in America in order to better assimilate. Assimilation meant changing their language and/or approach to food. So, when they made a thick sauce that they poured over a meal, they called it gravy.

Italian Gravy The Sunday Gravy - Italian Sunday Gravy Recipe
The Sunday Gravy
Italian Gravy
4 cups roma tomates
2 1/2 cups diced tomatoes
1 Tbsp extra virgin olive oil
3 cloves garlic, finely chopped
1 small white onion, chopped
1 Tbsp currants room temperature
1/4 cup pancetta
1 stick dry sausage
1 Italian Sweet Fennel Sausage
1 Tbsp Italian Seasoning
1 1/2 cups water room temperature
12-15 homemade meatballs (see recipe)

Instructions on how to make the Italian Sunday Dinner Gravy
Add extra virgin olive oil into heavy sauce pan over medium heat. Once the oil is warm add garlic, onion, cook until translucent. Next add the pancetta, to the pan now it is time to cut Italian sweet fennel sausage lengthwise and add to pan cut side down. Cook these on medium low heat and braise, and pancetta will slightly brown and become a tad crisp.
As the Italian sausage is braising in the pan. Cut the dry sausage in four or five nice chunk size pieces. Add to the pan. Next add the currants and once the currants have warm and become moist. Approx two or three minutes it is now time to add the whole roma tomatoes, gently stir, now it is time to add the seasoning followed by the remaining diced tomatoes. Stir thru. Bring to a rolling boil. Reduce heat setting to a low simmer.
Now it is time add the meatballs one at a time and gently stir into the gravy.
After all the ingredients have been added on a very low setting allow to simmer three or four hours. Boil a nice pot of macaroni and serve with the Italian Gravy ladle over the top with meatballs and your choice of desired meats. Salute!!
