How to Make Crunch Cucumber Kimchi | Oi Kimchi
Ingredients:
10 cucumbers, 2T of salt, 2T of sugar, half cup of red pepper powder, half cup of fish sauce, 2T of garlic, 1/2t of ginger, 3
T of wheat flour, 2T of honey, 1T of plum extract (optional)
A handful of chives, half onion, 3-4 red peppers
Step 1: Trim the cucumbers
Cut the washed cucumber. Remove the cucumber seeds. Cut it into about 3cm. Add 2T of sugar and 2T of salt to the sliced cucumber. And mix well. Pickle for about an hour.
Step 2: Chop the vegetables
Cut the onion to the suitable size. Cut the chives into 2 to 3 centimeters. Cut the red pepper very thinly. Slice carrots thinly and chop them.
Step 3: Making Cucumber Kimchi Seasoning in a bowl.
In the bowl, put half a cup of fish sauce, half a cup of red pepper powder, 2T of garlic, 1/2t of chopped ginger, 3T of the flour paste. 2T of honey. Mix all ingredients well.
Step 4: Mixing cucumbers with seasoning
Put the drained cucumber in the bowl. And add the seasoning you just made. Add the cucumber first, then add the onions, red peppers, and carrots. Put the chives at the end.
