Billa Kudumu is an authentic Vysya cuisine. It is a type of idli made from coarsely ground rice or rice rava available in shops. It’s a simple yet tasty and healthy tiffin suitable for all.
[Ingredients Required:]
2 Cups of coarsely ground rice
6 Cups of water
2 Tablespoon Bengal gram
2 Tablespoon Moong daal
3-4 Tablespoon shredded coconut
1/2 Tablespoon Ghee/Clarified butter
Salt as per taste
[Procedure to make coarsely ground rice:]
Take 2 Cups of rice
Sprinkle a bit of water and mix it with rice
Transfer to blender and blend coarsely
Sift the blended mixture to separate the coarsely ground rice and powder
Use only the coarsely ground rice for the recipe
Alternatively you can choose to buy the rice Rava available in stores readily
[Procedure to make Billa Kudumu:]
*Add 6 cups of water to a kadai
*Add 1/2 Tablespoon ghee
*Add the required amount of salt
*Bring the water to a boil
*Add the coarsely ground rice a little by little to prevent lumps from forming
*Keep on stirring to prevent lumps again
*Mixture will cook and start to get thick
*Once it’s cooked, there will be aroma of cooked rice and switch off the stove once you reach the consistency shown in the video
*Cover with a lid and keep it closed for 5-10 minutes
*Then add the soaked bengal gram & moong daal and the shredded coconut
*Combine well so that it gets mixed properly
*Take a handful amount and make into small balls
*Flatten the balls slightly to make it like a thick patty and arrange on a plate to steam it to cook completely
*Once all parties are prepared, place in a steamer to cook for 10-15 mins.
*Remove from heat and serve with hot chutney
*Billa Kudumu is ready!!!
