Peanut Chutney
Servings - 4
INGREDIENTS
Oil - 2 teaspoons
Peanuts - 60 grams
Ginger - 1 tablespoon
Garlic - 1 tablespoon
Dry red chili - 2
Onions - 80 grams
Tamarind - 1 teaspoon
Salt - 1 teaspoon
Paprika - 1/2 teaspoon
Water - 80 milliliters
Oil - 2 tablespoons
Mustard seeds - 1/2 teaspoon
Split white lentils - 1 teaspoon
Asafoetida - 1/4 teaspoon
Dry red chili - 1
Curry leaves - 8 - 10
PREPARATION
1. Heat 2 teaspoons oil in a pan, add 60 grams peanuts and roast for 2 minutes.
2. Add 1 tablespoon ginger, 1 tablespoon garlic, 2 dry red chili, 80 grams onions, 1 teaspoon tamarind and roast for 2 - 3 minutes.
3. Add 1 teaspoon salt, 1/2 teaspoon paprika and cook for 3 - 4 minutes.
4. Remove it from heat and cool for 5 minutes.
5. Transfer this into a blender, add 80 milliliters water and blend it well.
6. Heat 2 tablespoons oil in a pan, add 1/2 teaspoon mustard seeds, 1 teaspoon split white lentils, 1/4 teaspoon asafoetida, 1 dry red chili, 8 - 10 curry leaves and cook for 1 - 2 minutes.
7. Pour tempering over blended mixture and mix it well.
8. Serve.
