0/ Calibrate your Joycons' motion sensors with a Nintendo Switch. It's in Settings, Controllers and Sensors, Calibrate Motion Controls
1/ Download and install SlimeVR and SlimeVR Wrangler from the description
2/ Connect all your Joycons to your PC via bluetooth by holding down the Sync button on your Joycons until their lights turn on in a back and forth pattern and connect them to Windows like any Bluetooth device
3/ Run Wrangler and click "Search for Joycons"
3.5/ If all your Joycons don't appear : close Wrangler and disconnect then reconnect them all in the Bluetooth Settings, then run Wrangler again
4/ When they're picked up by Wrangler put your Joycons on your body according to what SlimeVR needs, you can read their documentation or watch tutorials
5/ In Wrangler you should see two arrows above each Joycon. Click on the arrows to rotate the Joycons : the images need to match the position of the Joycons on your body
6/ Run SlimeVR Server. The trackers, here Joycons, should be picked up and shown as regular trackers. Then you just use the SlimeVR options to put each one on each part of your body accordingly
7/ Run SteamVR.
8/ On the SlimeVR Server, click "RESET" on top and stand straight for 5 seconds. This will calibrate your trackers according to your body automatically
9/ Done! You should see your trackers when you look down at your body in VR and they should work with any game that supports it. See tutorials on Full Body Tracking for each game if you have issues

If you want to try this, you'll have to fine-tune SlimeVR a bit to get the trackers to point and turn in the right directions. For that, you can launch SteamVR to see your controllers and tracker(s), and use the "RESET" or "Fast Reset" buttons on top of the SlimeVR GUI : it'll re-center the trackers' positions. The Joycons are connected to the PC via Bluetooth, nothing fancy.

Didn't think it would work, but here we are! I'm extremely happy that the tracking turned out to be this good, and that I'm *this* close to Full Body Tracking. I should've recorded my first reaction, gosh the euphoria... I'll try to find a good camera for AprilTag to get my legs working properly in-game, but even without legs this is already a totally acceptable setup for VR for me.
