Double carb deliciousness in this episode, where Laura shows us how to make a type of potato filled flatbread using a pasta dough. The tortelli alla lastra are so called because lastra is a large thick slate roof tile, which is heated over a fire and the tortelli are then cooked on it. Laura tells me this is an ancient recipe which has been revived.
Corezzo is 750m up in the Appenine mountains, if you are hiking in the area, then visit Osteria dala Franca to try this tortelli and excellent pizza.
