First go to 'My Games and Apps"

Find Assassin's Creed Syndicate

Select 'Manage Games and Add-ons'

Go to 'Saved Data'

Select the profile that you want to delete the data on

Select 'Delete Everywhere'

Now you are ready to start a new game.
