In this video, we will turn a beautiful, aromatic herb like sage into a delicious antipasto or aperitivo by using only four ingredients: sage, flour, beer and salt. You can replace beer with sparkling water. However, the yeast contained in the beer will help your batter rise and will make it fluffier.
INGREDIENTS
40 leaves of fresh sage
120g of flour
200ml of beer or sparkling water
Salt
Vegetable oil
PREPARATION
Wash the sage with water and dry thoroughly with absorbent paper.
In a bowl, Whisk in 200mL of beer in 120g of flour. Make sure that by the end, it is smooth and lump-free.
In a large frying pan, heat up some vegetable oil. Dip each sage leaf into the batter and then place it in the hot oil. When it is golden on both sides, remove it and place it on absorbent paper.
Serve hot.
