Using a vortex on a Weber kettle is an easy thing to do. In this video we go over just that and cook simple crispy chicken wings.

First, we seasoned our chicken wings. For this cook we did absolutely nothing to these wings. No salt brine, no drying them off with a paper towel, no corn starch, no nothing.

We literally took them out of the package, sprayed a little duck fat, seasoned them with either Hey Grill Hey Chicken Rub, or Saints & Sinners Competition Chicken seasoning and then we fired up the grill. @saintssinnersbbq1333 @Heygrillhey

We used Jealous Devil Lump Charcoal (@JealousDevil) in our charcoal chimney, let those coals get hot and then dumped them into our Vortex that was centered in our 22" Weber kettle grill.

We closed the lid, opened both vents and let everything warm up for 5 minutes. Then we lined our chicken wings around the outside of the grill.

These wings cooked for about 20 minutes, we then turned them for a more even cook and sprayed with more duck fat. They cooked for another 20 minutes until the internal temperatures were reading about 200 degrees. I never even checked the grill temperature.

We pulled them off the grill, let them cool a bit and the result was fantastic. A nice crispy skin, bite through and great flavor!!
