I’m updating you with my new flexitarian pathway, including what I eat in a day, why I love it and some things I have learned so far.

❏ Recipes
Squash Soup:
Ingredients
1 Onion diced
1 squash, cubed
1 tbsp of olive oil
1 can of coconut milk
4 cloves of garlic, sliced
1 knob of ginger grated
1 tsp cumin seeds
1 tsp of coriander seeds
500ml of veg or chicken stock
Salt and pepper
Heat the oil and onion in a large pot on a medium heat. Sauté for 5 mins then add the garlic, ginger, squash and spices. Stir well and pour over the coconut, stock, season with salt and pepper. Bring to a simmer and allow to simmer for 35-40 mins. Blend and serve with yogurt and toasted sourdough.
