My white beans with spinach and cherry tomatoes is a quick and easy recipe that takes just over 10 minutes to make and goes with almost anything! All you need is canned cannellini beans (or any white beans), passata (crushed strained tomatoes), fresh garlic cloves, select spices and herbs, olive oil, salt and pepper and a splash of white wine. I personally love to serve these beans with eggs for breakfast and a slice of rustic bread but they will go with almost anything you like. This recipe is also entirely vegetarian/vegan. Enjoy!

Ingredients:
2 small cans of canellini beans 400ml/14 fluid oz drained
½ jar or 350ml/12 fluid oz of passata (strained tomatoes)
1 package of cherry tomatoes (10-12 cherry tomatoes)
1 jalapeño pepper or 1 hot chili pepper diced
1/2 package of spinach
Olive oil
1 tablespoon of freshly squeezed garlic
1 teaspoon salt and pepper
1 teaspoon of dry basil
1 teaspoon oregano
1 teaspoon chili powder
1/3 cup white wine
Ingredients Added Towards End of Cooking:
Fresh basil applied at end of cooking
1 teaspoon red pepper flakes
Splash of balsamic vinegar
Splash of olive oil
