Ginger Chicken:
Ingredients:
Chicken with bone 500gm
Ghee ¼ cup
Ginger paste 2 tbsp
Onion paste ¼ cup
Tomato puree ¼ cup
Yogurt 1 cup
Cream 3 to 4 tbsp
Salt to taste
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Garam masala powder 1 tsp
White pepper ½ tsp
Coriander crushed 1 tbsp
Ginger julienne 2 tbsp
Green chili big julienne 2 to 3
Fresh coriander chopped for garnish
METHOD
Heat clarified butter add ginger garlic paste with water fry well. Add all dry spices cook well. Add onion paste, tomato puree and yogurt cook till oil and gravy is separate. Add cream, julienned ginger and green chilies cook for 2 to 3 minutes. Add green coriander, serve.
Achari Mutton Pulao:
Ingredients:
Mutton with bones 500 gm
Rice 500 gm
Oil ¼ cup
Ginger garlic paste 1 tbsp
Green chili paste 1 tbsp
Tomato puree 1 cup
Yogurt ½ cup
Nigella seeds 1 tbsp
Fennel seeds crushed 1 tbsp
Coriander crushed 1 tbsp
Turmeric powder ½ tsp
Salt to taste
All spice powder 1 tsp
Green chili big 6 to 8
Raw mango powder 2 to 3 tbsp
Cumin crushed 1 tbsp
Lemon juice 2 tbsp
Fried onion for garnish
METHOD
Heat oil add ginger garlic paste and mutton cook well. Add green chili paste, red chili, nigella, fennel, crushed coriander, all spice and salt mix well. Add tomato puree and yogurt cook till oil is separate from gravy. In whole green chilies add raw mango powder, cumin and lemon juice. Add in gravy mix well. Add water let it boil. Add rice cook till water is rice level. Leave for 15 minute and simmer. Remove in a dish and garnish with onion.
Chicken Chili Pasta:
Ingredients:
Chicken slice cut 1 cup
Oil 2 tbsp
Garlic chopped 1 tbsp
Green chili big julienne 4 to 6
Onion slices 1 medium
Salt to taste
Chicken powder 1 tsp
Red chili crushed 1 tbsp
Black pepper ½ tsp
Soya sauce 4 to 5 tbsp
Spaghetti boiled 1 cup
METHOD
Heat oil add chopped garlic sauté well. Add chicken slices cook well. Add julienned chilies and onion with all spices cook well. When it’s done add soya sauce cook till chicken is done. Add boiled spaghetti mix well, remove in a dish serve hot.
