Ingredients:
2 tsp perilla seed oil
1 leek
12 small clams
400ml water
1 tbsp spicy doenjang
1 tbsp gochujang
1 tbsp minced garlic
1/2 cup yam
1 red snapper fillet
1 tsp sesame oil
Add 2 tsp perilla seed oil to a wok and heat up the oil. Add 1 chopped white parts of leek and sauté until leek oil is formed and aromatic.
Once the leek turns slightly brown, add 12 small clams and 400ml water. Season with 1 tbsp spicy doenjang, 1 tbsp gochujang and 1 tbsp minced garlic. Stir well and bring to a boil.
Once it’s boiling, add 1/2 cup of chopped yam chunks and simmer at low heat for 20 minutes until the yam is soft.
Add 1 red snapper fillet that has been sliced into chunks. Cook for around 5 minutes until the fish is just cooked. Drizzle 1 tsp sesame oil and it is done.
Pour the stew into a Korean earthen pot or ttukbaegi and garnish with green parts of chopped leek.
