How to make Beef Rendang Recipe
One of the most famous recipes ever
Ingredients:
1.5lb boneless chuck
2c coconut milk
2tbs tamarind concentrate
3tsp salt
1/4c kerisik (coconut butter)
6 kaffir lime leaves
Curry Paste:
2 dried chiles (i used guajillo, use jalapenos for medium, thai chiles for uber spicy)
6 cloves garlic
1/2c shallots
1 stalk lemongrass
2inch pc galangal
2inch pc ginger
5pc green cardamom
2tsp ground cinnamon
1 star anise
1/4c cashews (candlenuts if you can find them)
- Make your curry paste
- Saute in oil for a little bit then add the rest of your ingredients
- Cook over medium low for 3.5 to 4 hours (until the beef is super tender)
- It will go from looking like curry, to the fat seperating, then it essential fries itself in all that fat in the end
- So stir frequently towards the end. Careful not to burn it.
