Cowboy Cookies (Everything Cookies)
makes 12-18 cookies
What you'll need...
2 large eggs, well beaten
½ cup (120 mL) unsalted butter, melted & cooled
1 package FarmGirl Keto Vanilla Muffin & Cake Mix
2/3 cup (160 mL) chocolate chips
½ cup (120 mL) chopped pecans, toasted if desired
½ cup (120 mL) unsweetened coconut, toasted if desired
2 tbsp (30 mL) rolled or old fashioned oats (optional) *see notes below
What to do...
1. Preheat oven to 350°F (175°C) and line a large baking tray with parchment paper.
2. In a large bowl, mix beaten eggs with melted butter. Add FarmGirl Keto Vanilla Muffin & Cake Mix and stir well to combine.
3. Add chocolate chips, pecans, coconut and oats, if using; stir through to combine. Let rest 5 minutes to thicken slightly.
4. Scoop into 12-18 equal portions onto prepared baking tray. Roll into balls with hands for a more uniform cookie after baking.
5. Bake for 18-22 minute or until golden.
6. Cool slightly then enjoy!
Notes…
- The oats add about 1g of carbs per cookie, while they do contribute to that Cowboy Cookie flavour, they can totally be left out to make these even lower in net carbs.
