CUCUMBER NOODLES RECIPE:
Red onion
Tomato
Vegan feta
Sesame seeds
Tahini
Chickpeas
Salt
Pepper soy sauce
Parsley
*keep the leftover cucumbers for your tzatziki
CUCUMBER PICKLE;
cucumbers
Dill
Pepper grains
Bay leaves
2 x Garlic cloves
Equal part white vinegar and water
1 x Tbsp kosher salt x 2 cups of liquid
*Store in the fridge for up to 2 months
TZATZIKI RECIPE:
Grated cucumber
Vegan Greek yogurt
3 x cloves garlic
1 x Tbsp olive oil
1 x Tbsp lemon juice or vinegar
Herbs
Sea salt
Black pepper
*set aside your drained cucumber liquid to make your mocktail
CUCUMBER MOCKTAIL RECIPE:
Drained Cucumber liquid
1 x lemon juice
2 x Tbsp brown sugar
Herbs (I used basil mint, lemon thyme and lavender)
Cucumber skin
Shaker (optional)
Decorative herbs and flowers
Ice
