Sicilian Arancine full recipe:
RICE FOR ARANCINA:
250g Rice (Roma)
250g Rice (Parboiled)
2L water every 1 kilo of Rice
250ml vegetable oil
50g butter
5g Saffron
Salt and Pepper to taste
MEAT RAGOUT
250g minced pork
250g minced beef
20g diced carrots
20g diced celery
20g diced onions
20g green peas
20ml white wine
4 bayleaves
50g tomato paste
2L tomato sauce
Olive Oil
Salt and Pepper to taste
BATTER MIX
100g all purpose flour
100g water
Breadcrumbs
500g toasted fine bread crumbs
