Banana & Tomato Sabzi
- 2 very ripe bananas
- 2 pints cherry tomatoes halved or diced tomatoes
- ghee
- 1 tsp cumin seeds
- pinch of asafetida / hing
- 1/8 tsp of turmeric
- 1/2 tsp coriander powder
- 1/2 tsp red chili powder or more to taste
- 2 dried red chilies
- salt to taste
- lemon juice to taste
1. Cut your tomatoes and put them to the side, add your ghee to a hot pan and then add cumin seeds. Once the cumin seeds are sizzling, add the rest of the spices and fry just until sizzling / aromatic and then quickly add in your cut tomatoes.
2. Add a generous amount of kosher salt and cook down the tomatoes. As they soften and release their juices, press down on them with the back of your spoon to create a jammy consistency. Once you have a consistency you like, taste and add more salt and squeeze in half a lemon or to taste.
3. Cut your banana and add to a hot pan with ghee. Fry for a few minutes until they caramelize on each side. Assemble & enjoy!
