It is disheartening to see that a baby isn't able to relish her own 1st birthday cake to her heart's content. Smash cakes exist for this same reason. Here is one recipe for a 1st Birthday Smash Cake for your baby which is free from any ingredient for which she might not be ready yet.
Chocolate smash cake with cherry and cashew frosting!
Ingredients for Cake
1. Rice Flour - 1 1/2 cups
2. Cocoa powder - 1/3 cup
3. Salt - 1/2 tsp
4. Baking Soda - 1/4 tsp
5. Baking Powder - 1 tsp
6. Soy Milk - 1 cup
7. Fig puree - 1/2 cup (soak figs overnight and blend into a smooth puree)
8. Canola/coconut oil - 1/3 cup
9. Yogurt - 1/4 cup
10. Vanilla Extract - 1 tsp
11. Apple Cider Vinegar - 1 tsp
Ingredients for Frosting
1. Cashews soaked overnight - 1/2 cup
2. Fresh or Frozen Deseeded Cherries -1/2 cup
3. Coconut Cream - 1/4 cup (keep an opened coconut milk tetrapack in the fridge overnight and skim off the settled upper thick layer in the morning)
4. Fig puree - 1/3 cup
5. Canola oil - 2tbsp
6. Vanilla Extract - 1tsp
