That Sardinian food is better than most is proved by the fact that here in Sardinia we have one of the very few blue zones in the world. These are places where people live longer than in the rest of the world – some well beyond 100 years.
Research proves that this long life expectancy is due to a combination of healthy diet, strong family and social bonds, daily exercise and overall happiness.
STARTERS / APPETISERS
1 - ✅ Pane Carasau
The traditional ultrathin, crispy bread is a specialty of the island’s mountainous area. It’s made (traditionally by women) with hard wheat bran, water, salt, and yeast and gets double-baked at super-high temperatures (840 or 900 degrees Fahrenheit).
2 - ✅ Sardinian cheese
So for Sardinia - start with Pecorino Sardo - one of the oldest recipes. You can find different types: like younger cheese, mature or even smoked.
I love having it with the local bitter honey - taste fantastic together!
If you brave enough - go for Sardinian Casu Marzu cheese - traditional Sardinian cheese with maggots
3 - ✅ Bottarga
Bottarga is one of the most famous and tasteful delicacies of Sardinia originally coming from Cabras, a small town on the western coast of the island.
This dried mullet roe can be tasted in thin slices as a starter or can be used to dress pasta, usually spaghetti o linguine.
4 - ✅ Pardulas
Originally an Easter dessert, they’re now found year-round at almost any local bakery. Keep an eye out for an equally tasty variation called casadinas, made with young pecorino sardo instead of ricotta.
MAIN COURSE
5 - ✅ Fregula
Fregula is a unique variety of Sardinian pasta that’s similar to couscous and traditionally made by hand using a sort of sieve, called a scivedda, which divides the dough into small pellets. The preparation is similar to risotto
6 - ✅ Porceddu
This is probably the most famous Sardinian dish. The suckling pig or ‘porceddu‘ must weigh from 4 to maximum 6 kilograms and should be cooked entire with myrtle leaves for some hours and then served on a cork tray.
