Makes 9 squares in an 8x8 pan
Ingredients for Pumpkin Coffee Cake base
-2 eggs
-1/2 cup oil
-1/2 cup white sugar
-3/4 cups pumpkin puree
-2 tsps vanilla
-1 tsp cinnamon
-1/2 tsp nutmeg
-1/2 tsp ginger
-1 cup flour
-1 tsp baking powder
-1/2 tsp baking soda

Crumble Topping ingredients
-3/4 cups flour
-1/3 cup brown sugar
-1/4 cup white sugar
-1/3 cup butter, melted

Bake at 375F for 30-33 minutes (A toothpick inserted will come out clean)
